Ringkasan program
A diverse discipline covering both Western and Asian cuisines, the programme is built on institute unique expertise and the experience of established chefs who will provide students with an intellectually challenging and vocationally relevant education. Led by an award-winning faculty, Shatec Institutes is the only institution to have been inducted into the World Gourmet Summit Hall of Fame for winning the ‘Culinary Institution of the Year’ award for four consecutive years. This programme provides institute hosts with a holistic overview of the world of culinary arts as they learn culinary principles, management science, and contemporary dining concepts and cuisines, with real-life practice in industrial and commercial kitchens. They will be introduced to subjects that cover the essentials in professional kitchen management, menu conceptualisation and development, food cost management, and appreciation of Japanese cuisine. The six months internship will then equip students with relevant experience in a fast-paced commercial kitchen. This is where they will better understand professional kitchen dynamics, whilst learning from some of the industry’s culinary greats.

The course modules include Application of Host Communications, Basic Japanese Cooking, Communication Skills, English, Essentials of Food Knowledge, Event Catering, Food Science and Hygiene, Fundamentals of Beverage Knowledge, Fundamentals of Hospitality Hosting, Fundamentals of Western Cooking, Introduction to Information Technology, Kitchen Organisation, Kitchen Practicum, Menu Planning and Pricing, Pastry and Baking, Principles of Supervision, Principles of Western Cooking.
Persyaratan masuk bagi mahasiswa internasional
Applicants should have completed at least 10 years of formal education. They should have obtained a band 5.0 in the International English Language Test System (IELTS) or a minimum TOEFL score of 61 points (internet-based total) or 173 points (computer-based total). They should have also attained an interview with Shatec Institutes.
