This course is a combination of French cuisine and Patisserie. It provides participants with the fundamental culinary skills, from the use of culinary equipment to the planning and execution of elaborate dishes of French cuisine. They also learn to prepare a wide selection of cakes served in restaurants, patisserie shops and tearooms - through to classic and contemporary French desserts, advanced techniques in chocolate and sugar-work. It is composed of the Basic, Intermediate and Superior levels of French Cuisine and Patisserie.
