This course will introduce participants to classic French regional dishes through which they will apply the techniques introduced in the Basic level programme. Through practice and repetition, they begin to perform tasks more easily and instinctively. It emphasises the importance of mis-en-place: understanding, organisation and production. Demonstrations will highlight various kinds of presentations from platter to plate.
