The course is aimed at students who wish to combine a knowledge of food chemistry, food processing and food safety with an understanding of human nutrition and the relationship between diet and health; students may take an intercalated year in industry between years 2 and 3 and are eligible to apply for a prestigious Northern Foods or Sainsbury's scholarship; students can also gain a Certificate in European Studies.

Modul program

Year 1: Students are introduced to the basic principles of food science, nutrition and metabolism; a core programme of modules in biochemistry, genetics and foundation science provides the grounding for studies in subsequent years of the course; modules in nutrition and food science present an introduction to the relationship between diet and health. Year 2: Nutrition modules explore diet in relation to diabetes, obesity and coronary heart disease; complementary food science modules consider the practical methods used in food processing and preservations, as well as their underlying principles. Year 3: The final-year research project provides the main core of activity for the 3rd year; advanced modules are taken in human nutrition, with an emphasis on nutrition (e.g. public health nutrition, nutrition across the lifespan) and food science (e.g. food factory operations, measuring food quality).
