This course is an excellent qualification for those looking to gain a professional catering qualification. You could be an A level or BTEC student currently considering further studies, or an experienced chef in industry with good GCSE's looking for a high level qualification to progress your career. It covers in year one: food preparation, patisserie and confectionery design, food and beverage costing control, nutrition, diet and food science, food and beverage 1, international culinary arts; and in year two: the culinary project, food product development, hospitality marketing, gastronomy, food and beverage operations, work placement. On completion of this course, successful students with the appropriate level of qualification may be able to progress to a final Top-up Hospitality Management Honours Degree at Bournemouth University. Alternatively, suitable career areas in catering include: running a business, cruise liners, private hospitals, product development or product design, contract catering, or management of a hotel or restaurant kitchen.
